In the late 1800s, brothers Thomas and John Black developed the Jersey Giant with the specific intention of creating a premium table bird that could replace the turkey. Suddenly, their size makes sense! They were admitted to the APA in 1922. According to the Livestock Conservancy, their status is “watch.”
